Paleo Cauliflower Rice Stir-Fry

Ingredients:
- 1 medium head of cauliflower - or 1 bag Frozen Organic Cauliflower Rice
- 2 tablespoons coconut oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 2 carrots, julienned
- 1 cup broccoli florets
- 2 tablespoons coconut aminos (or soy sauce if not strictly paleo)
- Salt and pepper to taste
- Cooked chicken, prawns, beef, pork or fermented tofu for added protein - you can even try squid or monkfish too!

Instructions:
1. Grate the cauliflower using a box grater or pulse in a food processor until it resembles rice. Set aside.
2. In a large skillet or wok, heat the coconut oil over medium heat.
3. Add the diced onion and minced garlic, sautéing until fragrant, about 2 minutes.
4. Add the bell pepper, carrots, and broccoli to the skillet. Cook until vegetables are tender-crisp, about 5-7 minutes.
5. Push the vegetables to one side of the skillet and add the cauliflower rice to the empty space. Cook for 3-4 minutes, stirring occasionally, until the cauliflower is tender.
6. Combine the cauliflower rice with the cooked vegetables. Stir in the coconut aminos (or soy sauce) and season with salt and pepper to taste.
7. Add cooked protein of your choice and stir until heated through.
8. Serve hot and enjoy your nutritious and delicious paleo stir-fry!
